Brix Rum

Brix Rum is created, not produced. Born in Surry Hills amongst Sydney’s vibrant creative hub, our small urban distillery pushes the boundaries of rum making forward. Modern rums made for our generation, not the sailors and pirates of yesteryear. We experiment. We fail. We succeed. We use our ingenuity to focus on flavour, seeking out the best local ingredients and the finest organic Australian sugar cane, all distilled in our custom built copper pot still. Aging our rum in small casks allows us the freedom to explore more of our ideas. We play with different Australian barrels that once held Aussie wines or beers, pushing layers of flavour beyond the expected. The result is a series of unique, high quality rums with personality, to inspire drinkers to express theirs.
